Aging 1 year in Tava amphora of 1600 liters The amphora shines by its neutrality to transcend the definition of a terroir. THE AMPHORA, FOR THE AUTHENTICITY OF THE TASTE AND THE PURITY OF THE FRUIT, GAIN IN VOLUME, SOFTENING OF THE TANINS, MINERALITY and TENSION The result is wines that are much more expressive than in vats and close to barrels with superb aromatic radiance and silkier tannins, all without any woody notes.

Les Maros: west of the village, exposed to the rising sun, with schist at the foot of the hillside. Sheltered from the setting sun, this is our coolest vineyard area.

Vinification
Each land parcel is vinified separately .Total de-stemming, unpressed grapes
Daily circulation. Maceration for 15 days.
Maturing 12 months in concrete vats.

Characteristics of the land and  microclimate
Schist at an altitude between 150 and 200m on the foothills of the Larzac plateau.
The grapes ripen slowly thanks to the cool nights which mean they mature with good acidity and stay incredibly fresh.

Tasting
The soft Grenache with its hints of blackberries, blackcurrants and a touch of grated chocolate, is a perfect foil for the sharper, slightly liquorice notes so characteristic of Carignan.
In the mouth, full, well balanced tannins end on a rich, slightly candied note reminiscent of cherries and blackcurrant.

Vintage 2017 DECANTER 91/100 A fruity nose. The palate is dense and structured, raspberry and lingering flavor, a spicy touch and a finish with mineral notes. to age for a few more years.

Robert Parker : 2015 90/100. 2013 : 90/100. A decadently ripe, peppery, roasted herbs and black fruitscented effort, it’s medium to fullbodied, textured and balanced on the palate, with terrific purity of fruit.

Jancis Robinson : 2015 : 17/20 notes of cherry, stone fruit, lots of grace and freshness. 2013 : 17/20.

RED AND WHITE: 15.5 / 20, top 4 tastings. fresh juice. The palatability and tension are there, the ventilation does it good and brings out the floral expressions. A deep wine with elegant austerity.

Expression of the fresh climate and the geological puzzle of Saint Jean de la Blaquière: village of the XIIth century in the heart of a natural circus. Down to the foothills of the Larzac at the crossing of a Mediterranean and continental climate between 150m and 200m high.

Le Saut du Poisson : AOC Languedoc. White – Organic  wine

Lieu-dit  (small area definied)
The lieu-dit is called “Le saut du poisson”, south-east of the village, spectacular canyons of red rocks called “ruffes”, thick deposits of sandstones accumulated 250 million years ago. Freshness and minerality mark this terroir.  A confidential wine..

Grapes
White Grenache 60%, White Carignan 25%, Vermentino 15%.

Manual harvest

Terroir
on ground “Ruffes“ : thick sandstone deposits accumulated there 265 million years laid bare by erosion. very old soil unique in France.

Vinification
Cold settling. No malolactic fermentation to keep all the freshness.
Maturation: 25% in French oak barrels (320 liters – 1 to 3 wines), the rest in vats.
12 months minimum.

« Languedoc le Saut du Poisson Blanc is a beautiful white from this estate that’s based on Grenache Blanc, Vermentino and Carignan Blanc. Medium-bodied, fresh and lively, yet also with texture, it offers deliciously exotic notes of white peach, orange blossom, mint and hints of flowers. It will be versatile on the dinner table and drink nicely for a handful of years. »

Rosé from our red grapes with low yields, providing a beautiful aromatic richness with pressing and bleeding which make it a gastronomic rosé that borders on the profile of a white wine.

Degrees : 13 %

Vinification: Rosé de bleeding + press.

strict deburring. Vinification between 15 and 18 ° C. No malolactic fermentation to keep all the freshness. Bleeding: the 1st juice is isolated after 2 hours of vatting, very fine and delicate juice. Press: the whole bunches are pressed in a pneumatic press, the extraction is richer, aromatic and complex.
